Easter Cake Fun!

My family didn't do a giant Easter celebration this year, which was actually very nice. But I wanted to make something special to share with everyone anyway. I didn't want to make just any cake, though. I wanted something colorful to represent the beautiful Spring flowers. And I wanted something light to represent the joy of the real reason for this special day. So, this is what I came up with - a Tie-Dye cake with lemon vanilla frosting!

My inspiration started with a recipe at
Baking Bites. But instead of alternating chocolate and vanilla, I made a regular vanilla cake batter and separated it into three bowls. Then I dyed the batter in each bowl a different color - one pink, one light green, and one light blue. Then I took small cookie scoops and scooped the batter into the pan in alternating order (blue, pink, green, blue, pink, green, etc). They key is to drop each successive scoop of batter directly into the middle of the previous scoop. I did this for each of my 9-inch cake rounds and let gravity spread the batter across the pans. Then I baked the cakes per regular recipe directions, cooled them on a rack, and prepped them for frosting.

The frosting was a whipped vanilla frosting that I added lemon extract to. You could also use fresh lemon zest, but I was out of lemons lastnight. I frosted the cake and made a swirly pattern on the top. Then I chilled it to set the frosting.
I was so giddy to dig into this cake that I almost couldn't wait for the party. But oh, the wait was worth it! It is so good!!! And the design when you cut into it is so much fun!
