Recipe Thursday #3 - Banana Bread

Banana Bread

Ingredients
1 cup bread flour
1 cup whole wheat flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 - 3/4 tsp ground cinnamon (to taste)
1/4 tsp ground nutmeg
1/4 tsp salt
2 beaten eggs
1 1/2 cups mashed bananas
1/2 cup sugar
1/2 cup brown sugar
1/2 cup applesauce

Directions
1. Preheat oven to 350 degrees
2. Grease bottom and sides of one 9x5x3 loaf pan and set aside
3. In a large mixing bowl, combine flours, baking powder, baking soda, cinnamon, nutmeg, and salt
4. Make a well in the center of the mixture and set aside
5. In medium mixing bowl, combine beaten eggs, bananas, sugars, and applesauce
6. Add entire banana mixture to flour mixture and mix just until combined
7. Spoon batter into loaf pan
8. Bake for 35 minutes. Then add a foil tent to loosely cover the top of the pan, and cook for another 15-20 minutes
9. Cool in pan on wire rack for 10 minutes, then remove from pan and cool completely on wire rack

**This recipe began with the simple banana bread recipe in the Better Homes cookbook. I modified it quite a bit to fit our tastes/preferences.
