Recipe Thursday #10 - Shrimp & Avocado Salad

Here's one I had been holding onto until we could try it out in our own kitchen. We had it lastnight and it was so yummy!

Shrimp, Avocado, & Spinach Salad
with Creamy Parmesan Dressing


Salad Ingredients
Cooked shrimp of your choice (ours was warmed before serving, but cold works, too)
Baby spinach leaves (or a spring mix works well)
Avocados

**The amounts of each ingredient vary by how many people you are feeding. For two of us, we used 3/4 pound of shrimp, 2 avocados, and about half a large container of lettuce.

Dressing Ingredients
3/4 cup EV Olive Oil
1/2 cup grated Parmesan cheese
1/4 cup sour cream
2 Tbsp white whine vinegar
2 Tbsp water
1/4 tsp salt
1/4 tsp black pepper

**You can leave the vinegar out if it suits your taste better. I don't care for it, but my husband does. So I make mine, then add vinegar to his.

Directions
1. Combine spinach, avocados, and shrimp in large bowl and set aside
2. In small bowl, whisk together oil, cheese, sour cream, vinegar, water, salt, and pepper
3. Drizzle dressing over salad and serve immediately

That's it. That's all you do. It was delicious and so light. And it didn't take long to make. Hope you enjoy!

  1. that dressing sounds delish!! I cant wait to try this recipe! I made the pulled pork a couple weeks ago and is was awesome. Husband LOVED it!
