Recipe Thursday #16: Breakfast Casserole

I've been making this for special occasions for about a year now and my husband loves it. It started with a recipe given to me by a friend, then I changed the heck out of it to fit our tastes. So, it's pretty versatile and changeable for each of you, too! I will have to take a picture next time I make it so you can see how yummy it looks!

Breakfast Casserole

Ingredients

  • 3 Tbsp butter
  • 1 small white or yellow onion, finely chopped
  • 3 cups hashbrowns
  • 1/2 pound turkey or pork sausage, crumbled (we use one with medium spice level)
  • 1/2 pound ham, cooked and chopped
  • 1/2 pound bacon, cooked and chopped
  • 1 1/2 cups shredded cheddar and Monterey jack cheese
  • 2 1/4 cups milk
  • 5 eggs, beaten
  • Salt, pepper, paprika, and other spices to taste

Directions

  1. Preheat oven to 350 degrees
  2. Spray 9x9 pan with cooking spray
  3. Over medium heat in large skillet, saute onion in butter
  4. Add hash browns and break apart, then cook til soft
  5. In separate skillet, cook sausage
  6. Add cooked hashbrown/onion mixture to prepared pan
  7. Add sausage, bacon, and ham over hashbrowns
  8. Cover meats with shredded cheeses
  9. In medium bowl, combine eggs, milk, and spices
  10. Pour egg mixture over cheeses
  11. Bake for 40-45 minutes
  12. Serve warm

  1. this looks super tasty. Im not a huge fan of egg casseroles- but this looks like more filling than a ton of eggs. Ill be sure to try it out!!
