The Frugal Girls posted this recipe a few days ago and I was uber-excited to try it! I've been subbing like crazy this week, so I finally made them today and they are so good! They definitely need to be enjoyed with a big glass of cold milk, though! So here is my slightly modified recipe for this week!
Peanut Butter Chocolate Chip Muffins
Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 1/2 tsp. salt
- 1 Tbsp. baking powder
- 1 cup milk
- 2 eggs
- 1/3 cup organic sugar
- 1/3 brown sugar
- 1 cup smooth peanut butter
- 1/3 cup oil or applesauce
- 1 cup mini chocolate chips
Directions
- Preheat oven to 365 degrees
- Line muffin pans with paper baking cups (24 regular size muffins or 12 jumbo muffins)
- In large bowl, combine white flour, wheat flour, salt, and baking powder
- Make a well in the center of the flour mixture
- Add milk, eggs, organic sugar, brown sugar, and oil and mix well
- Add peanut butter and mix well
- Add chocolate chips and fold to combine
- Scoop batter into paper muffin cups and sprinkle top of each muffin with organic sugar
- Bake 15-18 minutes
- Cool on wire rack for 10 minutes, then remove from pan and let cool completely before storing
