Recipe Thursday #27: Peanut Butter Chocolate Chip Muffins

The Frugal Girls posted this recipe a few days ago and I was uber-excited to try it! I've been subbing like crazy this week, so I finally made them today and they are so good! They definitely need to be enjoyed with a big glass of cold milk, though! So here is my slightly modified recipe for this week!

Peanut Butter Chocolate Chip Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 tsp. salt
  • 1 Tbsp. baking powder
  • 1 cup milk
  • 2 eggs
  • 1/3 cup organic sugar
  • 1/3 brown sugar
  • 1 cup smooth peanut butter
  • 1/3 cup oil or applesauce
  • 1 cup mini chocolate chips

Directions

  1. Preheat oven to 365 degrees
  2. Line muffin pans with paper baking cups (24 regular size muffins or 12 jumbo muffins)
  3. In large bowl, combine white flour, wheat flour, salt, and baking powder
  4. Make a well in the center of the flour mixture
  5. Add milk, eggs, organic sugar, brown sugar, and oil and mix well
  6. Add peanut butter and mix well
  7. Add chocolate chips and fold to combine
  8. Scoop batter into paper muffin cups and sprinkle top of each muffin with organic sugar
  9. Bake 15-18 minutes
  10. Cool on wire rack for 10 minutes, then remove from pan and let cool completely before storing
