Recipe Thursday #21: Turkey Corn Chili

This one is entirely my own random concoction. I wanted to make some kind of new chili for us non-bean lovers to enjoy, so I threw together some basics and came up with this yummy chili! I tend to do it slightly different each time I make it, but it's always great! This is easily adaptable to your tastes and preferences, and it's a great one to freeze for later.

Turkey Corn Chili

Ingredients

  • 1-1.5 pounds ground turkey
  • 1 16 ounce can sweet corn
  • 1 6 ounce can tomato paste
  • 1 medium onion (diced)
  • 1/2 to 1 cup water **depends on consistency you prefer
  • 1-2 Tbsp olive oil
  • Salt, Pepper, Cumin, Crushed Red Pepper, Chili Powder, and Oregano to taste

Directions

  1. In large stockpot over medium heat, combine onions and olive oil
  2. Once onions begin to sweat, add ground turkey and continue to cook over medium heat
  3. Once turkey is cooked, add tomato paste, corn, water, and seasonings and stir to combine
  4. Cook over medium heat until low boil begins, then reduce heat to medium-low, cover pot, and simmer 10-15 minutes, stirring occasionally
  5. Serve in bread bowls or with corn chips with shredded cheese on top
