I'm sorry I don't have a photo of this one yet, but I haven't made a batch in a while. With the weather getting cooler, though, I am so ready to do some pre-holiday baking. I added this recipe to my regular holiday rotation last year. It's so delicious and it's pretty easy to make. Plus it's kinda pretty when it's all done. (I promise I will add a photo when I make this next time.)
Chocolate-Mint Fudge
Ingredients
- 2 cups chocolate chips
- 14 ounces sweetened condensed milk
- 2 tsp vanilla extract
- 6 ounces white chocolate chips
- 1 Tbsp peppermint extract
- Green food coloring
Directions
- Line 8 inch square baking dish with wax paper or foil, set aside
- In medium saucepan, combine chocolate chips and 1 cup sweetened condensed milk
- Cook over low heat until chips are melted and mixture is well-combined
- Add 2 tsp vanilla and stir to combine
- Spoon half of mixture into prepared baking dish, smooth out, and chill in refrigerator until firm (approx 15 minutes)
- Keep remaining chocolate mixture at room temperature
- In second medium saucepan, combine white chocolate chips with remaining sweetened condensed milk
- Cook over low heat until chips are melted and mixture is well-combined
- Add 1 Tbsp peppermint extract and a couple drops of green food coloring, stir to combine
- Spread mint mixture over chilled layer of chocolate mixture, smooth out, and chill in refrigerator until firm (approx 15 minutes)
- Spread remaining chocolate mixture over chilled mint layer, smooth out, and chill in refrigerator until firm (approx 2 hours)
- When firm, turn fudge onto cutting board, remove foil or wax paper, and cut into small squares
- Store in refrigerator until ready to serve
