Recipe Thursday #29: Chocolate Buttermilk Brownies

I just took a giant bite of these and I do think they may the best thing I've ever made! I am seriously in danger of eating the whole pan by myself. This is not good. But these are so good! It's a horrible predicament!

Chocolate Buttermilk Brownies with Chocolate Buttermilk Icing

Ingredients

Brownies

  • 2 cups all-purpose flour
  • 2 cups sugar (I used raw)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup butter
  • 1 cup water
  • 1/3 cup unsweetened cocoa powder (I used Hershey's)
  • 2 eggs
  • 1/2 cup butttermilk (I used the lowfat)
  • 1 1/2 tsp vanilla

Icing

  • 1/4 cup butter
  • 3 Tbsp buttermilk
  • 3 Tbsp unsweetened cocoa powder
  • 2 1/4 cups powdered sugar
  • 1/2 tsp vanilla

Directions

  1. Preheat oven to 350 degrees
  2. Grease a 13x9x2 inch baking pan and set aside
  3. In medium mixing bowl, stir together flour, sugar, baking soda, and salt and set aside
  4. In medium saucepan, combine butter and water and heat over medium heat
  5. Once butter is melted, add cocoa powder and stir to combine
  6. Continue stirring over medium heat until mixture boils
  7. Pour butter/cocoa mixture into flour mixture and beat with mixer on medium speed until combined
  8. Add eggs, one at a time, mixing well after each
  9. Add buttermilk and vanilla and beat for 1 minute on medium speed
  10. Pour batter into prepared baking dish and bake for 32 minutes (or until it passes the toothpick test)
  11. While brownies cook, begin preparing icing
  12. In medium saucepan, combine butter and buttermilk and heat over medium heat
  13. Once butter melts, add cocoa powder and stir to combine
  14. Heat butter/cocoa mixture over medium heat until boiling
  15. Remove from heat and add vanilla and powdered sugar
  16. Beat with icing with mixer until smooth and creamy
  17. When brownies are done baking, remove pan from oven and place on wire rack to cool
  18. Pour icing over hot brownies and smooth to cover evenly
  19. Allow brownies to finish cooling over wire rack and serve
