Recipe Thursday #1 - Cookies N Cream Truffles

Per another fabulous friend's suggestion, here's the first installment of Recipe Thursdays. This is my most requested recipe, and it also happens to be my husband's favorite!

Cookies N Cream Truffles

8oz package of cream cheese, softened
4 cups chocolate sandwich cookies, crushed (roughly one package of Oreos)
2 cups white chocolate chips
1-2Tbsp shortening

1. Beat cream cheese in medium bowl with mixer until light and fluffy
2. Lightly blend in crushed cookies
3. Cover bowl with foil and refrigerate for at least 2 hours
4. Quickly roll mixture into 1 inch truffle balls and place on wax paper lined cookie sheet
5. Place cookie sheet into refrigerator and chill truffles for at least 30 minutes
6. Melt white chocolate chips with shortening in double boiler or in microwave on 70% power
7. Using two spoons, dip and coat truffle balls in melted chocolate and place them on a fresh wax paper lined cookie sheet
8. Place cookie sheet into refrigerator to set truffles for about 10 minutes
9. Store truffles in refrigerator until ready to serve
